This superfood veggie pasta recipe is one of those go-to dishes that you simply won’t be able to live without once you know how to cook it. A perfect pre-work out fix that will leave you full of energy.
- Feta Cheese
- Red Peppers
- Red Onions
- Pasta (we used macaroni, but pick your own favourite shape!)
- Sweet potato
Start by dicing up the sweet potato and slicing the garlic, red onion and garlic. The prep work is light on this dish!
In a large frying pan, use olive oil to gently fry off the sweet potato until it starts to brown and soften. This process shouldn’t take more than 5 minutes over a low to medium heat.
Add the pasta to furiously boiling and salted water.
Add the red peppers and onions to the sweet potato, and cook for a good 10 minutes until they start to soften up and draw out all that natural sweetness.
At the last minute, add the garlic and cook for a further 2 minutes, before seasoning the mix with salt and pepper.
Just before the pasta is cooked, add the kale to the water. It won’t take more than 30 seconds to cook, so be quick.
Strain the kale and pasta and add it to the vegetable mix directly in the pan. Season with a little olive oil, salt and pepper. Make sure everything is well tossed and evenly coated in all those lovely flavours.
Finish the dish with some high-quality crumbled feta cheese.
